Ok, I “made” a sandwich would be a more accurate term, but I did make it in the kitchen so I “cooked”.
This is such a simple and delicious snack, I needed to share it! You will need an avocado, baby spinach, sun dried tomatoes and a red onion (original recipe here). I added some feta cheese and freshly ground pepper and it made it even more yummy! Oh, and it’s healthy too, so enjoy! ^_^
